Ingredients

1 egg
2 egg whites
.5 c. mushrooms
1/2 red bell pepper
1/4 c. Mexican 4 cheese blend
1 T. butter
1t. sea salt
Directions
saute' mushrooms and peppers in butter. Remove from skillet & set aside. Whisk together egg and egg whites, and add to hot skillet . When set, spoon peppers and mushrooms onto half of omlette and top with cheese. Fold empty side on top and serve.
