Slow Cooker Morrocan Chicken

Introduction

Number of Servings: 8

Ingredients

    8 bone in chicken thighs, skin removed
    1 med onion, chopped
    250g carrots, cut into pieces lengthwise
    1/2 cup dates
    1/2 cup dried apricots
    1/2 cup whole raw almonds
    400g sodium reduced chicken stock
    1 T curry powder, hot
    1 T cinnamon
    1 t salt

Directions

Place carrots and onion on bottom of crockpot. Layer fruit and nuts over top. Pour stock over vege. Place chicken on top of this. Combine spices and salt and sprinkle over chicken.

Cook 8 hours on LOW or 5 hours on HIGH.

I also made a vegetarian version by replacing chicken with beans and cooking for less time.

I serve with mashed potato and peas :)
