Peach and Gorgonzola Chicken Pizza with Arugula Salad

Ingredients

    1 (10 ounce) Multigrain Thin pizza crust (I used PC Blue Menu)
    1/2 cup (2 ounces) shredded part skim mozzarella, divided
    1 cup shredded cooked chicken breast
    1/3 cup (1 1/2 ounces) crumbled Gorgonzola
    1 medium peach, thinly sliced (peel on)
    1/3 cup balsamic vinegar or 2 tbsp balsamic glaze
    1 tsp minced shallots
    2 tsp lemon juice
    1/2 tsp honey
    1 tbsp extra virgin olive oil
    4 cups loosely packed arugula
    1/3 cup vertically sliced red onion

Directions

1. Preheat oven to 400

2. Coat baking sheet with cooking spray. Put pizza crust on tray and sprinkle evenly with 1/4 cup mozzarella, then chicken, gorgonzola, and peaches. Top with another 1/4 mozzarella. Bake in oven for 11 minutes or until cheese is bubbly and crust is golden brown.

3. While pizza is baking, make salad. Combine shallots, lemon juice and honey in a large salad bowl. Slowly whisk in olive oil. Add lettuce and red onion, and toss gently until evenly coated with dressing.

4. If using balsamic vinegar, heat in a small pan on medium-high heat for about 5 minutes, until reduced to a syrupy glaze, about 2 tablespoons. Evenly drizzle balsamic glaze (or the reduction) over the pizza. Cut into wedges and serve immediately.

Serving Size: makes 4 servings: 2 slices of pizza and 1 cup salad
