Ham Chowder

Ingredients

2 cups potatoes-peeled and diced
1 cup celery-chopped
1 cup carrots-diced
1 tbsp butter
1 tbsp EVOO
12 oz ham-diced
1 onion-diced
2 tbsp butter
2 tbsp EVOO
1 can of no fat evaporated milk and water to make 2 1/2 cups
4 tbsp flour
1/4 tsp salt
1/4 tsp pepper
1 tbsp parsley-chopped
Directions
Combine potatoes, celery, and carrots with two cups of water and cook until tender.
Heat 1 tbsp butter and 1 tbsp EVOO and saute onion and ham until soft. Add to veggies.
Add remaining butter and oil to a saucepan and heat until bubbly. Stir in flour and cook for 1 minute to make a roux. Gradually stir in milk, salt and pepper. Cook and stir until thickened. Por into veggies stirring constantly. Simmer on low heat for about 30 minutes. Stir occasionally. Garnish with parsley. Tastes better the next day
