Spicy Black Bean Soup

Introduction

Ingredients

    1 large onion
    1 large red bell pepper
    1 large green bell pepper
    2 medium carrots, peeled
    3 jalapeno peppers
    4 cloves garlic
    2 tablespoons olive oil
    3 (15 oz) cans black beans
    8 cups chicken or veggie broth
    salt & pepper to taste
    cumin
    coriander
    garlic powder (optional)
    smoked paprika (optional)
    cilantro (for garnish)
    lime juice
    nonfat plain yogurt or lowfat sour cream (for garnish)

Directions

Heat olive oil in pan and add diced onion, peppers, carrots, and garlic. Season with cumin, paprika if using, and a little bit of salt and pepper as the vegetables cook. Once the onions are translucent and the veggies start to soften, add black beans and veggie stock. Bring to a boil, and then lower heat and simmer for 15-20 minutes. You may puree the soup using a blender on a portion at a time, or an immersion blender, or a potato masher for a coarser texture (That's what I used, only because I didn't want to dirty up an applance... using a blender will make a thicker soup). Season with additional salt, pepper, coriander, smoked paprika, and garlic powder to taste (there's already garlic in this soup but I found it needed a bit more body once it simmered). Once the soup is heated and flavorful, spoon into bowls and top with chopped cilantro, a dollop of plain yogurt or sour cream, and finish with a squeeze of lime juice. Would be great with tortilla chips or cheese if you aren't as concerned with calories. Enjoy!
