Shrimp Tacos

Introduction

Ingredients


    1/4 cup RF sour cream
    1 tablespoons RF mayonnaise
    1 tablespoon milk
    1/4 teaspoon cumin, ground

    1 tablespoon olive oil
    Grill seasoning
    1/2 tsp. Cumin
    1 tsp. Chili powder
    Pastilla chile powder
    1 tsp. lime zest
    1 pound large shrimp, peeled deveined
    Salt
    4 corn Stand and Stuff tortillas, (60 cal ea)
    2 Tbsp. red onion, diced
    1 tomato, diced
    2 cups cabbage, shredded
    .5 avocado
    Bottled green Tomatillo salsa
    2 limes, cut into quarters



Directions

Pre-Heat grill.
Combine sour cream, mayonnaise, milk, and 1/4 tsp. cumin. Set aside.
Combine olive oil, lime zest, remaining seasonings and shrimp.
Large shrimp will not fall through grill. Grill shrimp 4 minutes on each side or until pink and opaque. Don't over cook so they stay juicy.
Remove from grill. Cooked shrimp weighs 10 oz total. Divide. Lightly salt the shrimp if desired.

Take a stand and stuff taco shell and lay some cabbage in the bottom. Sprinkle with avocado, tomato, and onion. Pile in shrimp in and add sour cream mixture and salsa if desired.
For a lunch, take taco shells and stuff at work.
