Yummy Crockpot Vegetable Soup (1 cup serving)

Ingredients

    1 tablespoon olive oil
    1 bag baby carrots
    1/2 whilte onion
    1 can Progresso Cannellini Beans
    2/3 cup raw pearled barley
    1 small can tomato paste
    1 large can of diced tomatos
    4 cups of lower sodium chicken or beef broth (fat free)
    1/2 head of cabbage
    1 bag PictSweet frozen summer vegetables
    pinch of oregano

Directions

Heat olive oil in skillet. Add onions. Sautee until soft. Add onions and rest of ingredients to crockpot. Cook on low for 8 hours.
