Ingredients

1/2 cup wheat bulgar, soaked in...
1 cup boiling water
2 TBS. Ghee
1 large onion, minced
2 jalapenos peppers, minced
2 cups dry shiitake mushrooms, rehydrated
3/4 cup (~2 small) carrots, minced
1 cup frozen peas, cooked & mashed
1 cup rolled oats, break up with fingers
1/2 cup walnuts, minced finely
1 tsp. thyme, dried
.5 tsp. sage, dried
.5 tsp. salt
1 tsp. black pepper
1.5 tsp. red chili powder
1/4 cup chickpea flour
1 large egg, well beaten
Directions
Soak bulgar in boiling water.
Fry ghee, onions, jalapenos, shiitake, and carrots until tender.
Let cool.
In large bowl, mash peas. Add oats, walnuts, spices, chickpea flour, and cooled mixture. Mix well. Add well beaten eggs and mix again.
Shape six patties and fry about three minutes on each side. Serve hot, cold, or freeze.
Serving Size: Makes six 3/4 cup patties.
