Change of Heart Red Quinoa Citrus Salad

Ingredients

QUINOA INGREDIENTS
1 cup dry red quinoa
1/4 cup diced red pepper
1/4 cup diced celery
1 cup diced granny smith apples
2 T chopped mint
2 cup water
1/2 cup toasted almond slivers
1/4 c diced yellow pepper
2 T chopped parsley
1 tsp orange zest
CITRUS DRESSING
.75 c OJ
1 T honey
1/4 cup canola oil
1 T apple cider vinegar
salt & pepper to taste
SERVE ON AND GARNISH
12 cups mixed greens
1.5 cups pineapple
Directions
Bring water to boil. Add quinoa & simmer on low heat for 15 minutes. Remove and cool in medium bowl. When cool, add remaining ingredienst through orange zest and toss wiht citrus dressing (below)
Citrus Dressing - whisk OJ through salt & pepper.
Serve over 2 cups mixed greens and garnish with 1/4 cup pineapple.
Serving Size: 6 1.5 quinoa over 2 cups mixed greens & garnished with pineapple
