Mini Zucchini Muffins

Ingredients

1 1/3 C. Sugar
1/3 C. vegetable oil
1.5 C. shredded zucchini
1/3 C. water
1 2/3 C. Whole Wheat Pastry flour
1 tsp baking soda
3/4 tsp sea salt
1/4 tsp baking powder
1 tsp vanilla extract
1/2 tsp cinnamon, ground
1/2 tsp cloves, ground
1/4 tsp nutmeg, ground
Directions
Preheat oven to 350 degrees F. Spray your mini mini muffin pan, or grease it.
Mix all ingredients together until well blended. Scoop into muffin cups, just under the full mark. Bake in oven for 15 - 18 minutes. Loosen with a knife, then turn out and let cool.
