Naomi's One-pot Quick & Easy Spaghetti & Meatballs

Do it all in just one pot! This recipe uses canned sauce, frozen onions & peppers, and pre-made frozen meatballs for a one pot meal with almost no clean up! Ingredients

    1.5C frozen onion & pepper blend
    1 - 26oz can Hunts Zesty & Spicy Spaghetti Sauce
    1/2 can water + some more
    2 zucchini, shredded
    2 carrots, shredded
    6C Casa Italian beef frozen meatballs (45 meatballs)
    1 - 13oz box whole wheat rotini (or penne)





Directions

1. Spray 6 qt. soup pot with EVOO spray. Add onions & peppers and saute until thawed and softening, about 5 minutes.

2. Add can of sauce, 1/2 can water, meatballs and shredded zucchini and carrots. Simmer for 10-15 minutes, or until meatballs are thawed.

3. Stir in pasta. Press pasta down into sauce evenly. If the noodles are not covered, add a small amount of water just to cover the pasta.

4. Simmer on low, stirring occasionally, until pasta is tender - about 10-12 minutes.
