Ann's breakfast cups

Introduction

Kind of a South Beach but with lots of added stuff...yummy Kind of a South Beach but with lots of added stuff...yummy
Number of Servings: 12

Ingredients

    9 large eggs
    1 bag frozen stir fry veggies or 1 cup bell peppers
    3 ounce mild cheddar
    3 ounce swiss cheese
    4 sausage links
    1.5 cups cooked mushrooms

Directions

cook mushrooms and sausage in stir fry pan until lightly browned. Add stir fry veggies (or peppers) and cook an additional 5-6 minutes, stirring constanly. In a large mixing bowl break eggs and beat. Add in veggie/mushroom/sausage mix and mix well. Line muffin pan with cupcake liners (12) ad spoon mixture into the cups. Sprinkle the cheese on top and bake at 350 for 20 minutes or until done to your liking.

Serving Size: makes 12 breakfast 'cups'
