Introduction

This is a variation of the asian salad. I had to improvise as I didn't have all the ingredients in the original recipe on the meal plan. Lots of veggies and a store bought light viniagarette I had on hand. This is a variation of the asian salad. Number of Servings: 2

Ingredients

    1 1/2 cups Dole Cole Slaw mix
    4 carrots, chopped
    .25 cup cucumber diced
    1 broccoli floret chopped
    1 cauliflower floret chopped
    8 pea pods chopped
    2 scallions, chopped
    6 tblsps Wishbone, light raspberry walnut viniagarette

Directions

Chop vegetables toss to combine.
Grill or sear chicken (I used my George Forman Grill)
Combine with dressing just before serving

Serving Size: Makes 2 3 cup servings
