Introduction

Number of Servings: 16

Ingredients

    olive oil, 1 T.
    leeks 4 C. chopped
    celery 2.5 C. chopped
    celeriac root or turnips, chopped, 2 C.
    carrots, chopped, 3 C.
    potatoes, diced 2 C.
    water 12 c.
    chicken thigh skinless, 2 diced
    chicken breast skinless, 1 diced
    rosemary 1 T. fresh
    lemon juice 1 T. fresh
    salt and pepper to taste

Directions

saute diced leeks in olive oil, add other veggies and cook until lightly browned, add chicken stock or water, add diced chicken, lemon, and rosemary and simmer for 40 minutes, do not boil. Salt and pepper to taste, makes about a gallon for freezing or eating up.
