Ingredients

    1 cup quick-cooking oats
    1 cup whole wheat flour
    2 tablespoons sugar
    2 teaspoons baking powder
    1 teaspoon salt

    1.5 cups skim milk
    .25 cups vegetable oil
    1 teaspoon lemon juice
    2 eggs, lightly beaten

Directions

Combine oats, flour, sugar, baking powder, and salt in a mixing bowl. Make a well in the center. Combine milk, oil, lemon juice, and eggs; pour into well and stir just until moistened. Let sit for ten minutes for oats to soak up some of the liquid. Pour batter by 1/4 cupfuls onto hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown.
