Introduction

Tried to lower the fat, salt and sugar and boost protein without changing the texture...for John's benefit. Turned out better than I expected. Be sure not to overcook. Ingredients

    1 cup Whole Wheat Flour
    .5 cup Quinoa Flour
    1 tsp Baking Powder
    1 tsp Baking Soda
    1/8th tsp Salt
    1 Tbsp Cinnamon, ground
    2 Oranges, medium
    1/8th cup Apple sauce unsweetened, Compliments
    1/8th cup Olive Oil,
    1 Egg
    .5 cup Orange Juice
    .25 cup Granulated Sugar
    .25 Walnuts, chopped
    1 cup Granola
    .5 cup of dates chopped

Directions

Preheat oven to 375 F. Combine the flours, baking powder, baking soda, salt and cinnamon. Add the walnuts and dates, stir till well coated. Set aside. Grate the orange, squeeze out the orange juice and scrape out the pulp. Blend the egg, orange juice, sugar and the oil applesauce.
Pour over dry ingredients and stir until just combined. Gently stir in Granola . Spoon into greased or paper lined muffin cups. Bake 15 - 20 minutes or until top springs back when lightly touched. Remove from pans and cool on wire rack. Voila...
