Modified Broccoli Salad

Introduction

Number of Servings: 4

Ingredients

    Salad:
    1/2 pound broccoli (about 2 crowns)
    1/4 sweet onion, chopped
    scant 1/4 cup raisins
    1/3 cup chopped lean ham
    2 teaspoons (about 10 grams) toasted almonds
    Salt and pepper to taste

    Dressing:
    3 tablespoons light mayo
    1 tablespoon sugar
    1 1/2 teaspoon cider vinegar

Directions

Combine dressing ingredients and whisk to combine. Pour over remaining ingredients, except almonds. Chill for at least an hour. Sprinkle almonds over the top just before serving.

Serving Size: Makes 4 one-cup servings
