Introduction

level I 1 cup soup, 1 tablespoon protein powder
level II 2 cups soup, 2 tablespoons protein powder
level II 2 cups soup, 3 tablespoons protein powder
level I 1 cup soup, 1 tablespoon protein powder
level II 2 cups soup, 2 tablespoons protein powder
level II 2 cups soup, 3 tablespoons protein powder

Number of Servings: 8

Ingredients

    1/2 teaspoon dark sesame oil
    1/3 cup shallots, finely chopped
    3 tablespoons miso
    7 quart vegetable stock
    1/4 cup firm silken tofu, diced
    3 tablespoons scallions, sliced for garnish

Directions

1. Heat the sesame oil in a saucepan over medium heat. Add the shallots and cook until translucent.
2. Add the miso paste and mix well. Add the vegetable stock and bring to a simmer. Reduce heat to tow and
simmer for 15 minutes.
3. To serve, ledle into bowls and garnish each serving with tofu and scallions.
4. If desired, add protein powder just before serving.
