Brown and Wild Rice

Ingredients

    1Tbl: Olive Oil
    3 Cloves: Garlic, minced
    1 Stalk: Celery, minced
    1: Carrot, minced
    1.4 c: Onion, minced
    1/3 c: Wild Rice
    4 c: Chicken Broth
    1/2 tsp: Salt
    1/2 tsp: Pepper
    1 1/2 c: Brown Rice
    2 Tbls: Parsley , chopped
    2 c: Peas, fresh or frozen

Directions

1) Heat oil in a small saucepan over medium-high heat. Add the garlic, celery, carrot, onion, and wild rice, and saute until the onion is transparent, about 2 minutes.

2) Stir in 1 cup of the broth and season with salt and pepper.

3) Increase heat to high and bring to a boil. Reduce the heat to low, cover and cook until the rice has burst open and is tender, about 40 to 60 minutes.

4) Meanwhile combine the brown rice and the remaining 3 cups of broth in a large saucepan. Season to taste with salt and pepper, cover, and bring to a boil over high heat.

5) Reduce the heat to low and boil gently for 35 to 40 minutes, until the rice is tender. Remove from the heat and let sit, covered, for 10 minutes. Then fluff with a fork.

6) Fold in the wild rice, parsley, and peas. Check seasoning.

7) Let stand for 5 minutes to heat the peas. Serve hot.
