Greek with Everything Quinoa

Number of Servings: 6

Ingredients

    1 C. quinoa
    2 C. water
    3 cloves garlic
    1 T. olive oil
    1 lemon, thinly sliced
    1/2 tsp. crushed red pepper flakes
    1 tsp. dried oregano
    salt and pepper to taste
    1 red onion, diced
    1 green pepper, diced
    1/2 c. pitted kalamata olives, coarsly chopped
    1-2 tomatoes, chopped, or 1 pint cherry tomatoes, halved
    1 tsp. dried parsley
    5 oz. feta cheese, crumbled
    3-4 greek hot peppers (peperoncini), chopped

Directions

Cook quinoa with the 2 c. water, according to instructions. Meanwhile, saute and season with salt and pepper, red onions, lemon, and bell peppers with the olive oil. Cook 5 minutes. Add garlic and other seasonings and toss a minute, then add olives and tomatoes to the pan and cook a couple of minutes more. Add cooked quinoa, feta, and hot peppers. Serve. This is especially delicious as a side to grilled shrimp or salmon (the maple syrup/soy sauce/ garlic recipe is what we like).
