Chicken Alfredo

Introduction

A lower fat, quick version of one of my faves. A lower fat, quick version of one of my faves.
Number of Servings: 8

Ingredients

    1 T. olive oil
    2 lbs. chicken breast, cut into strips or cubes
    1 green pepper, chopped
    8 oz. fresh mushrooms
    2 cans low fat cream of mushroom soup
    3/4 c. skim milk
    1 T. garlic powder, or however much you prefer
    1/2 c. parmesan cheese

Directions

Saute chicken in olive oil until cooked through and beginning to brown. Add all other ingredients, except cheese. Cover and simmer about 20 minutes. Add cheese and heat through. Serve over whole grain pasta (not included in calories).
