Ham and Cheese Breakfast Bake

This makes two separate casseroles. One to bake and use right away and the other to freeze and use later. This makes two separate casseroles. One to bake and use right away and the other to freeze and use later.Number of Servings: 12
Ingredients

3 cups seasoned croutons (I used Brownberry stuffing)
2 c. shredded reduced fat 4 cheese mexican cheese
1 cup frozen onion, chopped
8 eggs
4 cups milk
1 t. salt
1/8 t. black pepper
1 t. dijon mustard
Directions
Sprinkle croutons, cheese, onion and ham into two greased 8-inch square baking dishes. In a bowl, combine the eggs, milk, salt, mustard and pepper. Slowly pour over crouton mixture. Cover and freeze casserole for up to 3 months. Bake the second casserole, uncovered, at 350 degrees for 45-50 minutes or until a knife inserted near the center comes out clean.
TO USE FROZEN CASSEROLE: Completely thaw in the refrigerator for 24-36 hours. REmove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees for 50-60 minutes or until a knife inserted near the center comes out clean.
Serving Size: Makes 2 casseroles at 9 servings per casserole
