Very Veggie Frittatas

Ingredients

    Eggbeaters, 1 cup
    Onions, raw, 4 tbsp chopped
    Mushrooms, fresh, 2 medium finely chopped
    Peppers, sweet, red, fresh, 4 tbsp
    Asparagus, fresh, 4 spear, small finely chopped
    Broccoli, fresh, 0.25 cup, chopped or diced
    Bacon Bits (No Name), 32 gram(s)
    Black Diamond Light Cheddar, 40 gram(s)
    Potato, raw 1/2 cup shredded

Directions

Preheat oven to 350. Place 2 Tbsp shredded potato and put into 4 ramekins sprayed with Pam. Finely diced each vegetable and divide evenly into ramekins. Sprinkle with bacon bits and finely diced cheese. Pour Eggbeaters (1/4 cup each)over top and bake for 25-30 minutes or until centers are set. Spices like herbs de provence can be added for extra flavour without affecting calories.
