shrimp, spinach and linguine with olive oil and garlic

Ingredients

    .25 c olive oil
    4 cloves (or 4 t. minced) garlic
    1 lb cooked shrimp with tails removed (15 oz)
    225 grams fresh white mushrooms (8oz)
    .5 package of whole wheat linguine
    5 oz bag of fresh baby spinach

Directions

saute mushrooms and garlic in oil, add shrimp and spinach, just until hot. Add to the cooked linguine. Serve with freshly ground sea salt and freshly ground coarse pepper. (I added a sprinkling of Lawry's seasoning salt while cooking too, I am a salt freak!)

    It was delicious! i like strong flavors so I added fresh basil and crushed red pepper flakes. For an extra 10 calories, I grated 1/2 tsp of fresh romano cheese on it - 11/11/07

    I added 1 cup of chopped fresh parsley and about 1/4 tsp of crushed red pepper flakes for a kick. I didn't have mushrooms and added lightly steamed broccoli florets instead. - 6/1/10

    This is similar to my recipe. After I drain the pasta; I save one cup of the water
    and add to the shrimp and spinach. Then I add

  • YummY! My Hubbie said, I out did myself, and that it was better than a restaurant's! I didn't have mushrooms, I put in a few shredded baby carrots and a thin slice of red onion and cut up and fried a piece of bacon in it as well! AND I splash of low sodium beef broth. - 3/14/11
