Fabulous Family Omelets

Introduction

Number of Servings: 3

Ingredients

    Cheddar Cheese, 1cup, shredded
    Peppers, sweet, red, raw, sliced, 1 cup
    Mushrooms, fresh, 1 cup, pieces or slices
    Spinach, fresh, 1 cup
    Onions, raw, 1 cup, chopped
    Ham, extra lean, (5% fat), 1 cup, diced
    Omelet (egg), 6 large
    *pam (1 spray), 1 serving
    s/p to taste
    Optional:
    assorted cheeses- Swiss, American, Blue, etc.
    Get creative with your veggies- Try fresh eggplant, tomatoes, and baby greens..


Directions

Preparation:
Set out assorted bowls of fresh veggies, cheeses, and ham chunks. Each family member chooses their favorite toppings, and places them in a microwave save bowl.

Once toppings are chosen; place bowl in the microwave for 1 min. To thoroughly steam meat and veggies.

Meanwhile: The cook is ready to man the stove! Crack two eggs into a bowl. Add salt and pepper to taste. Whisk together until well beaten. Add eggs to hot non-stick skillet coated with nonstick spay. Using a spatchula that is upside down when eggs begin to firm work the omelet from the outside in. Once solid flip completely over. Add heated ingredients.
Select your cheese(s). Top your omelet.
Fold and Serve hot with whole wheat toast, and orange juice.

Then move on to the next omelet until the entire family has their own made to order omelets.

****This is a great chance to work together as family. Talk while working together! Take turns cooking! Laugh, and have fun! If you wreck your omelet; it's ok! ( We call them junkyard omelets) LOL. Remember breakfast is important and this is a great way to slow down and enjoy a meal together!
