Ingredients

4 boneless, skinless, raw chicken breast tenderloins, cut in half
1/2 cup light coconut milk
1 shallot, chopped
1 clove garlic, chopped
1 tbsp brown sugar
2 tbsp reduced sodium soy sauce
1 tsp fish sauce
zest of 1 lime
1.5 oz. ginger root, grated
10 green, seedless grapes
Directions
Whisk together the coconut milk, shallot, garlic, brown sugar, soy sauce, fish sauce, lime zest, and ginger root. Pour over the chicken breast tenderloin pieces in a shallow dish. Cover and refrigerate for 20 minutes.
Heat and prepare your grill. Prepare a skewer by alternating 1 grape - 1 piece of chicken - 1 grape - 1 piece of chicken - 1 grape - 1 piece of chicken - 1 grape - 1 piece of chicken - 1 grape. Repeat for the second skewer. Grill about 2-3 minutes on each side, basting with the marinade to keep the chicken moist. Serve immediately.
