Introduction

Two of my favorite things in one recipe, how could it taste bad? ell it didn't! It was so good!!! I got this recipe from hungry girl and just made some modifications to lower the calories a pinch more. Two of my favorite things in one recipe, how could it taste bad? ell it didn't! It was so good!!! I got this recipe from hungry girl and just made some modifications to lower the calories a pinch more.
Number of Servings: 2

Ingredients

    6 oz of sweet potato - peeled and diced into bite size pieces
    1 Granny Smith Apple - cored and diced into bite size pieces
    1 tbsp. of dried cranberries
    1 Tbsp of light margarine - I used Brummel and Brown
    1/4 tsp of Pumpkin Spice
    1 tsp brown sugar - unpacked

Directions

Preheat oven to 350

Take a piece of aluminum foil and place on baking sheet. Spray with cooking spray.

Cut up apples and potato into bite size pieces and place on foil. Add remaining ingredients.

Take another piece of aluminum foil and place over top of potato and apple mixture and fold to seal all four edges. Make a steam foil pack.

Bake for 25 minutes or until potato and apples are tender.

Serving Size: 2 side dishes sizes
