I am making this up for Mothers day lunch.
It is served with a side salad of choice
The lasagna serves 7.
You will have to calculate you own choice of side salad

Ingredients

    Lasagne Sheets
    6 sheets Wholemeal ready to cook lasagna or can use just plain ..

    Meat layer

    500grms of very lean minced beef
    2Tbl spoons chopped onions.
    2 cloves garlic
    6 plum or Italian tomatoes skinned and chopped.
    1/4 tsp of Oregano
    1/4 tsp of Basil.
    1 small dash of Virgin Olive Oil

    Vegetable Layer
    2 large leaves of Silverbeet or Spinich
    1/2 cup of Peas
    1/2 cup of grated Carrot
    1/2 cup of Red Green Capsicum or your own choice

    Sauce Layers
    2 cup of low fat milk
    2 tsp of Corn Flour.
    4 oz of low fat Chedder Cheese
    Lasagne sheets

Directions

In Pan place the Oil, Onion, and Garlic... cook slowly till soft , add skinned and chopped Tomatos, Oregano,Basil,( you may have to adjust to taste with the Basil and Oregano)
cook slowly till all soft . Place in a warm area ..

Place Silver beet or Spinich,Peas, grated Carrot. chopped Capsicums
In a microwave dish and cook for 2 minutes.
set this aside also
I disolve the cornflour in a little of the milk first before placing milk in a pan heat the milk, add the cornflour mixture, Cheese and stir till cooked .
Grease a ovenprove dish big enough to serve four and place about a third of the meat mix, cover with lasagne sheet add a third of the cheese, then a third of a layer of the vegetable mix do this untill all is used up finishing with a cheese layer Place in a preheated oven at 175 degrees. if using fan forced 160 degrees.
Check halfway through and adjust temp ...
