minstrone soup

Number of Servings: 8

Ingredients

    4 cups organic chicken broth
    1 onion chopped
    1 large or 2 small carrots sliced
    2 celery stalks sliced
    1 med zucchini halved lengthwise and sliced
    1 can petite tomatoes (reg flavor) 14oz
    1 each red,yellow,green peppers diced
    1/2 cup of snap peas (fresh)
    1/2 cup of green beans (fresh)
    1/2 cup of snow peas (fresh)
    2 green onion chopped
    1-15.5oz garbanzo beans drained
    1-1.5oz red beans drained
    1/2 cup fresh chopped parsley
    1 tsp Italian herb seasoning
    salt and pepper to taste
    1/4 cup grated Romano of Parmesan cheese
    dash of garlic if wanted
    add additional water if to thick




Directions

add all ingredients in large soup pot and bring to boil and simmer until veggies are cooked

Serving Size: makes 8 servings
