Bread & No Butter Rhubarb Pudding

Introduction

A low fat and healthy twist on an old favourite.

Ditched the 'Butter' and added rhubarb so there's even one of your five a day!

Ditched the 'Butter' and added rhubarb so there's even one of your five a day!

Number of Servings: 2

Ingredients

    2 slices wholemeal bread
    100 ml skimmed milk
    2 eggs
    3 tspn splenda
    1 tspn sugar
    1 stalk of rhubarb
    drop vanilla essence
    nutmeg

Directions

Boil the chopped rhubarb in a little water until softened and place in a shallow dish.

Add bread - sliced into triangles - and lay on top.

Mix egg, milk and vanilla essence

Pour over bread and rhubarb

Sprinkle with nutmeg and 1 tspn suger
