Caroline-Style Barbecue Sauce

Introduction

Found this recipe in a book given to the hubby years ago. Adapted to add more head, less mustard and wow - it's good! Simmer however long you till it is the consistency desired! Ingredients

    3/4 cup brown sugar - divided
    3/4 cup yellow mustard (i ended up doing a little over a 1/2 cup)
    1/2 cup cider vinegar
    1/4 cup hot sauce (tapatillo, cholula, whatever is on hand)
    2 tablespoons vegetable oil
    2 tablespoons Worcestershire Sauce
    1/2 tsp salt
    1/4 tsp black pepper
    Red pepper flakes to taste
    Cayenne or other hot pepper powder

Directions

1. Combine 1/2 cup sugar and the rest of the ingredients. (keep some of the hot peppers for next step)
2. Pour 1 cup of the resulting mixture over chicken for marinade (marinate 1 hour to overnight)
3. When almost ready to eat - take remaining sauce and last 1/4 cup brown sugar in a small sauce pan.
Bring to a boil. Reduce heat and simmer for 5-15 minutes - depending on consistency desired - will thicken after it comes off the stove. Stir often!
4. If marinading chicken - grill for 15-20 minutes basting with marinade. Do not baste last 5 minutes of cooking.
