Banana Bran Muffin Mix

Introduction

Number of Servings: 224

Ingredients

    1 cup butter, unsalted
    5 mashed banana's
    2 cups artificial sweetener (chandrel, Splenda)
    1 cup brown sugar
    4 eggs beaten
    2 cups shredded Bran
    4 Cups 100% Bran cereal
    1 1/2 Cups boiling Water
    5 cups Whole Wheat Flour
    1 Tablespoon plus 2 teaspoons baking Soda
    2 Teaspoons salt
    4 Cups Milk

Directions

Cream Brown Sugar, Butter and artificial Sweetener, Add beaten eggs, Add Mashed Bananas.
In a separate container add bran and hot water set aside.
In a separate Bowl add Flour, Soda, and Salt.
Slowly add to creamed mixture with lg wooden spoon, Slowly add bran mixture and milk alternately
Mix thoroughly. Fill greased muffin pan or cupcake liners in muffin pan with about 1 tablespoon of mixtureor 2/3 full. Bake at 400 deg for 20 min.
Extra batter will keep in refridgerator for one month. You can have fresh muffins every day.
A healthy alternative to Banana bread. Add pecans if you like or leave out the banana for a plain bran muffin that you can change daily by adding different fruit. Blueberries for example.
