Authentic Key Lime Pie, with Reduced Fat

Ingredients

    1 Reduced Fat Graham Cracker Crumb Pie Crust
    1 14oz can Fat Free Sweetened Condensed Milk
    4 egg yolks
    5/8 c. Key Lime juice* (note: this is 1/2 c + 2 tbsp)


    * Fresh Key Limes make the best pies. Check the produce section; ripe Key Limes are yellow and about the size of a golf ball. If you can't get fresh, real key limes in your area, you can buy the juice jarred. Manhattan brand is decent.

Directions

Preheat oven to 350* F.

Whisk together egg yolks and condensed milk. Slowly stir in the juice and continue to whisk until well combined.

When well mixed, pour into empty pie crust. Bake in the middle of the oven for 15-20 minutes. (Note: This pie does NOT change color when baked.)

Remove from oven and allow to cool on a wire rack. The pie filling will firm up as it cools. When cool, chill in refrigerator for 6 hours.

If desired, serve with a spoonful of fat free cool whip. Makes 10 servings.
