Bacon/Herb Roasted Pork Loin

Ingredients

.25C Extra Virgin Olive Oil
1Tbsp minced garlic
2Tbsp chopped sage
2Tbsp chopped rosemary
dash of salt & pepper
2.5lb boneless pork loin
5 strips bacon
Directions
Put oil and seasonings in food processor until pureed. Put pork loin in roasting pan, rub puree into meat on all sides, cover with foil and refrigerate over night.
Take pan out of fridge and let sit for 35 minutes while oven is preheating to 350 degrees.
Remove foil and wrap bacon slices around roast. Place pan in oven and cook until roast reaches 165 degrees in the center, about 45 minutes. Let stand 15 minutes before serving in quarter-inch strips.
