Introduction

This is my mom's recipe. It's good PA Dutch Pot Poi - this is made with noodles, not crust; I estimated for the nutrition. All ingredients are pretty much to your discretion. This is my mom's recipe. Number of Servings: 20

Ingredients

    Pot Poi:
    Whole chicken (2.5lb)
    Parsley flakes (4Tbsp)
    Celery (1C)
    Onions (3Tbsp Dried)
    Potatoes (10 Lg)
    Eggs (6 Hard Boiled)
    Margarine (1/4 Cup)
    Noodles:
    1 cup flour
    1 tsp baking powder
    Salt
    1 egg
    Milk (3 half egg shells filled)

Directions

Put meat in crock-pot or stockpot. Simmer parsley, onion, and diced celery with meat, til meat is cooked well and falls from bone. Remove meat. While meat cools, cook pot poi noodles and potato chunks in boiling broth. The broth will thicken while cooking. Pull meat apart, drop into boiling mixture, along with salt, pepper, and 1/4 lb margarine.

Noodles:
Mix, roll, cut, & cook in boiling broth for 30 minutes.

Should make about 20 1C Servings or 5qts. We make it in a crock pot or stock pot.
