Jasmine Rice with Green Onions and Almonds

Ingredients

    2-1/2 cups chicken broth
    1-1/4 cups jasmine rice
    2 Tbsp extra-virgin olive oil
    6 green onions, thinly sliced
    1/4 cup sliced almonds
    2 Tbsp chopped fresh parsley
    salt & pepper, to taste

Directions

Combine the chicken broth and rice in large saucepan and season with salt. Bring to boil over high heat.

Reduce heat to low; cover and cook until rice is tender, about 15 minutes.

Remove from heat and let stand covered 15 minutes.

Heat oil in large nonstick skillet over medium-high heat. Add the green onions and almonds and saute for 30 seconds.

Reduce heat; add rice and saute until heated through, stirring to break pieces, about 5-6 minutes.

Serve immediately.
