Raspberry Cream Thimbles

Ingredients

    1 c (375 mL) unsalted butter, softened
    1 c (375 mL) granulated sugar
    8 oz (250g) package cream cheese, softened
    2 eggs
    2 tbsp (30 mL) lemon juice
    1tsp (5 mL) grated lemon zest
    4 c (1100 mL) unbleached flour
    1 tsp (7 mL) baking powder
    tsp (1 mL) salt
    cup (125 mL) raspberry jam (or other flavour)
    cup (50 mL) icing sugar

Directions

With an electric mixer, combine butter, sugar and cream cheese in a large bowl until smooth. Add eggs, one at a time, followed by lemon juice and zest. Beat well after each addition.

In a medium size bowl sift flour, baking powder and salt. Add to the large bowl slowly, mixing just until dough is smooth. Cover with plastic; chill for about 1 hour or until firm.

Preheat oven to 375F (190C). Line 2 cookie sheets with parchment. Roll dough into 1 in. (2 cm) balls. Make a hole in the top of each ball with a thumb or thimble and fill with jam. Place about 2 in. (5 cm) apart. Bake 10 to 12 minutes or until lightly browned on bottom.

Transfer to cooling rack right away. Cool completely, then dust cookies lightly with icing sugar.

Serving Size: Makes approx. six dozen cookies, depending on the size of the rolled balls.
