Lisa's Tasty Minestrone Soup

Introduction

This lovely soup is a great comfort food to enjoy. I was at first skeptical about the kale, but it goes very well in this recipe! Believe me...you will want to go back for more!! Number of Servings: 10

Ingredients

    8-12 C. Chicken Broth (10 bullion cubes+12 C. Water)
    2 T. garlic cloves (minced)
    1 C. chopped Onions
    1 T. Rosemary (minced or chopped)
    2 C. Sweet Potato (cubed)
    1C. Celery Stalk, chopped
    1 C. Carrots, chopped
    1 C. Green Beans (fresh-snapped)
    2 C. Chopped Kale
    2 C. Diced Tomatos
    1 Fresh Med Tomato, chopped
    3 C. Penne Rigate (Ronzoni-Smart Taste) Pasta
    1 13-15 oz. White beans (northern)
    6 oz. Cooked Chicken Breast-Shredded or Chopped

Directions

Bring all the ingredients together except of the pasta and bring to a boil. Boil until potatoes are tender (approx. 10 min.) Add the pasta and cook another 5 mins. Serve--YUM YUM!!!
You have a choice to sprinkle a generous amount of Parmesan cheese. Plus fresh pepper. You can also add fresh corn and edamames if you have them. BUT you will need to seperately add them to your daily food tracker, outside of the soup.
