Tuscan White Bean & Spinach Soup

Ingredients

• 1 tbsp olive oil
• ½ med onion, chopped
• 2 cloves garlic, minced
• 1 carrot, chopped
• 1 stalk celery, chopped
• 1/8 tsp dried thyme
• 1 bay leaf
• 2 ½ cups veggie broth (27 ounces)
• 1 can diced seasoned tomatoes (7 ounces)
• 1 can white beans (14 ounces)
• 1 pkg frozen, chopped spinach (5 ounces)
• ½ tsp each salt & pepper
Directions
1) Heat oil in a soup pot on medium heat.
2) Next add onion, garlic, carrots, celery and thyme and cook for 10 minutes. Add veggie broth, tomatoes and the bay leaf.
3) Drain beans, separate ¼ of them and mash. Throw the whole and mashed beans into the pot.
4) Squeeze water from thawed spinach and add to pot.
5) Season with salt and pepper and simmer for 40 -2 hr until desired taste is reached.
