Sauteed Chicken Breast with Creamy Fresh Herb Sauce

Ingredients

    2 Boneless, Skinless Chicken Breasts
    2 Tbsp olive oil
    2 large shallots, finely chopped
    2 cups Chicken Broth
    1/2 Cup Reduced-fat Sour Cream
    2 Tbsp Dijon Mustard
    2 Tbsp Fresh Chives, Finely Chopped
    2 Tbsp Fresh Parsley, Finely Chopped
    Salt & Pepper, as needed

Directions

Place chicken between sheets of plastic wrap and pound with a meat mallet or heavy skillet until flattened to an even thickness, about 1/2 inch thick. Season both sides of chicken with salt & pepper.

Heat olive oil in large skillet over medium-high heat. Add chicken and cook until golden brow, about 1-2 minutes per side. Transfer to a plate and cover to keep warm.

Reduce heat to medium and add shallots; cook, stirring constantly and scraping up any browned bits, until translucent, about 1-2 minutes. Add broth and bring to a hard simmer, stirring often.

Return the chicken to and any accumulated juices to the pan, reduce heat to a simmer, and cook until heated through, about 6-8 minutes. Stir in the sour cream and mustard until smooth. Turn the chicken to coat with sauce. Stir in fresh herbs and serve.
