Mexican Tostada

Introduction

Ingredients

    1 corn tortilla

    1 can fat-free refried beans

    1/4 cup (per tortilla) fat-free shredded mozzarella cheese

    2 tbsp taco sauce

    Veggies to top! Load up on tomatoes, lettuce, onions, or anything you're craving!

    More veggies and preferred toppings for a side salad.

Directions

Recipe make one tostada, so multiply by however many you want to make!

Pre-preparation --
Heat your oven to 350 degrees.

Very lightly spray each side of the tortilla with a heart-healthy cooking spray.

On a flat baking pan, place each tortilla completely flat and place in the oven.

Bake on the first side for 3 to 5 minutes until it begins to harden. Flip and lay flat to second side and bake until golden and crispy.

Microwave refried beans for 45 second increments, stirring between, until hot all the way through.

Assembly --
Smear 1/5 cup fat-free refried beans evenly and to the edges of the tortilla. (The 1/5 cup is a guideline. Use more or less dependent on taste, but calories are calculated for 1/5 cup.)

Sprinkle 1/4 cup fat-free shredded mozzarella cheese over top. Keep larger piles towards the middle - cheese will melt from higher areas to lower, and out towards the edges.

Microwave for 45 seconds, or until cheese is melted evenly.

Top with taco sauce and any veggies you like! (Calories and nutrients for tostada do not include any veggies. Please track any additions.)

Serve with a side salad. Top your salad with salsa for a tasty meal! (Calories and nutrients for tostada do not include this salad. Please track.)
