Moist Turkey Meatballs and Marinara Sauce

Introduction

Ingredients

    2 pounds 93/7 lean ground turkey
    3/4 cup minced fresh onion
    2 Tbls spoons minced garlic
    2 Tbls italian seasoning
    1 Tbls fennel seeds
    2 large eggs
    1 quarter cup plus more for sprinkling grated parmesan cheese
    1 can low carb spaghetti sauce (Hunts) or low sugar tomato sauce
    1/4 cup red wine (if desired)
    1 Tbls plain non fat yogurt
    1 Tbls kosher salt
    large pinch red pepper flakes
    black pepper to taste

Directions

Pre heat oven to 375.
Mix 2 lbs lean ground turkey 90/10 with 1/2 cup minced onion, 1 Tbls garlic, 1 Tbls italian seasoning, 1 Tbls fennel seed, 2 eggs, 1 Tbls plain non fat yogurt, 1/4 cup Parmesan cheese, 1 Tbls Kosher salt, red pepper flakes and black pepper to taste together in bowl. Line a large baking pan with foil. Form 12 to 14 large meatballs and bake 10 -12 minutes. While meatballs are baking, heat tomato sauce with remaining onion, garlic, italian seasoning and red wine (if desired). Remove meatballs from oven and add to sauce. Simmer for 15-20 miniutes. Serve with steamed broccoli or veggie of choice and ENJOY!
