Ingredients

2 zucchini chopped (or frozen or canned)
1 can diced tomatoes (I use low sodium, but any variety works well))
salt and pepper to taste
Directions
Slice zucchini and place in saucepan or microwave dish. Add 1 can tomatoes and cook on medium heat until zucchini tender. Add salt and pepper to taste.
