Ingredients



    * Chicken Breast, no skin, 4 unit
    * Butter, unsalted, .25 stick
    * Scallions, raw, 4 medium (4-1/8" long)
    * Garlic, .5 cup
    * Eggs, scrambled 4 (large)
    * Lime Juice, 1 Tbsp (.5 fl oz)
    * Beans, white, 1 cup
    * Chickpeas (garbanzo beans), 1 cup
    * White Rice, long grain, 3 cup
    * Mung beans, mature seeds, sprouted, cooked, boiled, 1 cup
    * Soy Sauce, 3 Tbsp

Directions

Cook/steam rice...

Thaw, chop chicken breasts. Dice scallions. Drain & rinse the beans.

Scramble the eggs and set aside.

Heat wok on high, add butter, garlic and diced scallions. Cook up your chicken with the soy sauce prior to adding the beans in the same wok. Let the mixture heat up a bit before adding your lime juice and scrambled eggs. Last, toss in your mung beans and let go until they soften a bit.
