Pumpkin-Shrimp Soup

Introduction

We used Nucoa and Almond Milk to make it non Dairy but you could use butter or margerine and regular milk, whatever kind you usually use. We used Nucoa and Almond Milk to make it non Dairy but you could use butter or margerine and regular milk, whatever kind you usually use.
Number of Servings: 5

Ingredients

    2 Med Onions, diced
    2 Med Carrots, diced
    1 T Cilantro, minced
    2 t Fresh Ginger, grated
    2 cloves Garlic, minced
    1/2 t ground Allspice
    2 T Nucoa
    1-15 oz can Pumpkin (NOT Pumpkin Pie Mix!)
    1-14.5 oz can Fat free Chicken Broth
    1 C Original Flavor Almond Milk
    1 Lb Shrimp Peeled

Directions

In large skillet melt 1 Tbs Nucoa, Add first six ingredients, cook until tender. Place in Food Processor, puree until smooth with half of chicken broth. In same skillet, heat remaining ingredients until heated through, Combine, serve with sour cream and chives to top.

Serving Size: makes 5 1 1/2-cup servings
