1 lb. boneless, skinless chicken breasts, cooked and diced
1/2 c. walnut pieces, toasted and chopped
1/2 c. olive oil mayonnaise
1/2 c. red seedless grapes, quartered
1/4 c. red onion, finely chopped
1/4 cup celery, finely chopped
Salt & pepper to taste (I used 1/2 & 1/4 tsp, respectively)

To toast the walnuts, toss them in a non-stick saute pan over medium-low heat until fragrant. They can burn easily, so take care and shake the pan frequently!
Toss in a bit of curry, dill or other seasonings of your choice to change up the flavor profile!
Makes approximately 5, 1/2-cup servings.
