Tomato Cream sauce Linguini with grilled sausage and chicken

Introduction

Ingredients

    9 oz whole wheat linguini (Barilla)
    4 cloves of garlic
    1/2 cup diced onion
    2 tablespoons Olive Oil
    1 (8 oz) can tomato sauce
    4 oz light cream cheese
    1/2 cup white wine
    12 ounces of chicken breast
    4 links of Italian or sundried tomato turkey sausage
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1/2 cup white wine
    2 tablespoons fresh basil
    1 tablespoon fresh parsley
    Chicken marinade
    2 tablespoons white wine vinegar
    italian seasonings like Tuscan Sunset from Penzey's

Directions

Begin by cutting chicken breast into strips and tossing in white wine vinegar and seasonings.

Bring large pot of water to boil for pasta and preheat grill on high.

Once grill is hot, turn down to medium for about 5 minutes per side and grill chicken and sausage. (I cooked all 6 links but reserved 2 for use on pizza on another night.)

Once water is boiling cook pasta as directed, or 7 minutes.

Meanwhile in non stick skillet saute onions and garlic in olive oil until tender. Stir in wine and let it reduce by at least half. Add in tomato sauce and let simmer.

When chicken and sausage are done set aside to cool slightly and then slice.

Add cream cheese to sauce and let melt. Then add chicken and sausage and pasta. Toss with fresh herbs and serve hot.

Serving Size: Makes 6 (1 1/3 cup servings)
