Mix cottage cheese, milk, and pudding mix in blender until smooth. Refrigerate until set (doesn't take long). This is slightly thicker than regular instant pudding, with a lot more protein. 1/2 of a cup (1 serving) is a great snack, 1 cup will really tide you over.
Easy to make, I was able to blend it by using my immersion blender. Great mixture by combining something sweet with protein. I added small amount of cinnamon and instant coffee. Will plan to make again!
Yumm! Blended the cottage cheese until it was smooth, then added the milk and pudding mix. Made it with a 4-serving package of pudding, so used 1-1/2 cups of cottage cheese and milk each. Easy and quite satisfying.
This is great! Next time I'll add in some of the clear mixing fiber powder from Walgreens, too. I think this will make an awesome butterscotch pie in graham cracker crust-WOW! Thanks for the recipe.
I was so excited to try this out, however, mine has been sitting over night and it is still liquid. Any suggestions?
Reply from CHEZDISHMAN(2/19/09) Sorry, I just saw your comment. I think maybe you were using cook-style pudding mix instead of instant? The instant pudding should thicken in the fridge in about an hour...
I thought this was great. It has a good amount of protein and it's a tasty way to get dairy in. It was pretty hard to get it smooth in the blender, but if you blend it for long enough, it's very creamy.
I have made something similar to this using cottage cheese and peanut butter, and it really tasted like cheesecake!! I can't wait to try this too!!! I love cottage cheese any way I can get it, but to use it for something sweet, sounds wonderful!!!
