Hat & Scarf Soup

Ingredients

    1 tsp Olive oil
    1 cup Carrot, chopped
    1/2 cup Celery, chopped
    1/2 cup Onion, chopped
    6 cloves Garlic, chopped
    1 Jalapeno pepper, seeded and chopped
    1 Chicken Breast, chopped
    1 Tbsp Cumin
    6 cups Chicken broth
    6 cups Water
    1 serving Buckwheat Soba
    Juice of 1 Lime
    2 cups Spinach

Directions

On medium heat saute carrots, celery, onion, garlic and jalapeno pepper in olive oil until onions are translucent.
Add chopped chicken and cumin, cook chicken on all sides, about 8 minutes,
Add chicken broth and water. Bring to boil.
Add soba noodles and cook according to package directions.
Add lime juice and spinach, stir.
Turn off heat and serve immediately.
Makes 8 2-cup servings.
