Introduction

Easy twist on a traditional Japanese dish. Chicken and egg over rice. Not too healthy, but delicious for that every once in a while meal. Easy twist on a traditional Japanese dish. Chicken and egg over rice. Not too healthy, but delicious for that every once in a while meal.
Number of Servings: 4

Ingredients

    ~3 cups hot cooked rice (depends on how much you want)
    1 Tbsp chicken broth
    4 Tbsp water
    2 Tbsp soy sauce
    5 tsp sugar
    ~1 lb chicken breast, cut into bite sized pieces
    1/2 onion, thinly sliced
    6 eggs, beaten

    Optional Garnish:

    2 chopped scallions
    Crushed Chili Pepper

Directions

1. Combine chicken broth, water, soy sauce, and sugar in medium saucepan or frying pan.
2. Add chicken and onion and heat over medium-high heat until chicken is just cooked through (avoid boiling!).
3. Pour in beaten eggs slowly and turn heat to low. Cook the egg to desired doneness by shaking pan without stirring (want it a bit runny).
4. Arrange rice in individual bowls and ladle egg/chicken mixture over the top. Garnish with scallions and chili pepper if desired.

Serving Size: makes 4 servings, feeds 2-4 people
